Coconut Peanut Butter Pancakes

These steaming stacks of fluffy pancakes with lashings of CocoMaNuts were created by the talented Olivia Moore at @thatgreenolive. CocoMaNuts has the perfect runny consistency - ideal for drizzling over all your kitchen creations!
SERVES 1-2
INGREDIENTS
- 1/3 cup oat flour
- 1 tbsp coconut flour
- 1 tsp ground flaxseed
- 3/4 tbsp cornstarch
- 1 tsp baking powder
- 1/3 cup almond milk
- 1 tbsp maple syrup
- 1/4 tsp lemon juice
- 1/4 tsp vanilla
- 1 tsp CocoMaNuts Smooth Peanut Butter
- Pinch salt
DIRECTIONS
- Mix everything in a bowl and rest for 15 minutes.
- Heat lightly greased frying pan over medium heat. When hot, dollop in batter to make little pancakes. Flip when 'set'. Repeat until batter has been used up.
- Stack pancakes and top with lashings of CocoMaNuts smooth coconut peanut butter 🥥🥜🙌
