Fudgy CocoMaNuts Choc Brownies

Did someome say... FUDGY COCOMANUTS CHOC BROWNIES??!! Soft, fudgy, chocolatey and with that sweet finish of swirly CocoMaNuts PB, drizzles of dark chocolate and a sprinkle of himilayan salt! These delish brownies were crafted by the talented @thislifeasjasmin

 

INGREDIENTS 

  • 1 ¼ cup rolled oats
  • 3 tbsp cacao/cocoa powder 
  • ¼ cup chocolate protein (or switch for all cocoa) 
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 2 tbsp flaxmeal + 5tbsp water
  • 1 cup soy milk
  • 1 tsp apple cider vinegar
  • ½ cup coconut sugar
  • 1 tsp vanilla
  • extra peanut butter, dark chocolate + himilayan salt to top! 

 

METHOD 

Preheat oven to 180°C and line a baking tray. Prepare your flax egg by adding the water to the ground flax and leave to gel for 10-15 minutes. Add apple cider vinegar into the soy milk and leave to sit. 
Blend rolled oats to a fine flour, and add to a large bowl along with the rest of your dry ingredients (except the coconut sugar)... mix.
In another bowl, mix your coconut sugar, CocoMaNuts PB, vanilla, soy milk and flax egg. Stir to combine. 
Add in your wet and dry ingredients and mix all to combine. If too thick, add in another 1-2 tbsp of soy milk. Do not overmix! 
Spread brownie batter into your lined tray and dollop peanut butter on top, spiral over gently with a knife. 
Bake for 22-24 mins or until a fork comes out clean. 
Leave to cool, (or don't, these are especially yum still warm!)
Drizzle with dark chocolate and sprinkle with himilayan salt. Enjoy!
