Strawberry Almond Butter Summer Tarts
We just had to post this strawberry recipe for you guys cause 'tis the season!' These are the best raw sweet treats just in time for summer when the strawberries are flowing and they are just so fun to make! Crafted by the gorgeous @thislifeasjasmin
- 1 cup desiccated coconut
- 1 1/2 cup rolled oats
- 1/4 tsp salt
- 1 tsp vanilla
- 1 tbsp CocoMaNuts coconut almond butter
- 1/4 cup coconut oil
- 2 tbsp date paste (or use dates and more maple syrup!)
- 1 tbsp pure maple syrup
- 4 pitted dates
- 2 cups chopped fresh strawberries (about 10 large)
- 1/2 cup coconut cream (the thick part!)
- 1/2 tbsp coconut sugar
- 1 tbsp lemon juice
- 1 tsp vanilla
- 1 tbsp cornflour / tapioca starch
Blend coconut, salt, and oats together until the oats turn to a flour. Chop dates and soak in boiling water for 5 - 10 mins.
Melt coconut oil and add to a small bowl with the date paste and almond butter, maple syrup and vanilla.
Place wet base ingredients, soaked dates and dry base ingredients into a blender. Mix on high speed until a bliss ball mix forms and it is well binded. If mixture doesn't bind well add more coconut or almond butter.
Place base mix into silicone molds, scooping out the centre and pressing against the sides so you have a case for the filling. Place in the freezer to set.
Mix all filling ingredients in a blender until a beautiful pink strawberry cream forms. Once bases have set, pour in the filling! Fill to the top of each cup but try not to overfill.
Place back in the freezer until fully set, preferably overnight. Drizzle with CocoMaNuts coconut almond butter and top with fresh strawberries and granola. Store in the freezer and remove at leave 10 mins before eating!
